These healthy snacks are so quick to make and so inviting, especially with so many abundant and vibrant vegetables available in the summer time! Your kids may be able help to make these healthy snacks using their favourite ingredients that will work on a bamboo skewer or these food picks. They are also great for an adult sharing plate – think Greek Salad on stick!

Serves: 4 sticks
Ingredients
Your choice of thickly sliced (or bite size) healthy vegetables and cheese such as:
  • cucumber
  • capsicum
  • cherry tomatoes
  • olives
  • radish
  • carrots
  • cheese (omit if dairy free)
  • fresh basil leaves or baby spinach leaves
Instructions
  1. Prepare your chosen ingredients for these healthy snacks and skewer them on to food picks or bamboo sticks.
  2. Refrigerate in an airtight container until serving or using in a lunchbox.
Note: You can use whatever vegetables are in season which makes these a really economical lunchbox addition. Combine them with a hard-boiled egg or some cooked chicken and you’ve got a perfect combination of protein and vegetables (and dairy if you’re adding cheese) to satisfy your kids for the afternoon - or a delightfully inviting afternoon tea when they get home from school. They’re also a really fun alternative to the boring sandwiches!
