Quick Beetroot Relish

Serves: 1½ cups
Ingredients
- 1 T oil
- 1 small red onion, finely diced
- 1 t fresh ginger, finely chopped
- 2 c fresh beetroot, finely grated
- 2 T currants
- 2 T balsamic vinegar
- 2 t maple syrup
- 1 t all spice
- ¼ t salt
- a good grinding of black pepper
Instructions
- Heat the oil in a medium sized pot, add the onion and cook for 3-5 minutes until soft. Add the ginger, beetroot, currants, balsamic vinegar, maple syrup, all spice and salt and pepper. Cook for 5-10 minutes until soft.

They’re a seedy homemade cracker I made but I can’t for the life of me think where I got the recipe sorry! I think it was out of a recipe book I have but I have loads so I wouldn’t know where to start. 🙂
