Nut Free Protein Balls

If your school has a nut free policy, the Nut Free Protein Balls are a great alternative using seeds. The addition of protein gives you and your kids that extra boost when you need it. They're also gluten, egg and dairy free too.

Serves: 16-20 balls
Ingredients
- 4 medjool dates, pips removed and soaked in boiling water for 5 minutes, drained
- ½ c pumpkin seeds
- 1 c desiccated coconut
- 1 t vanilla essence
- 1 T pure maple syrup
- 2 T cacao powder
- ¼ c chocolate protein powder
- ½ c coconut oil, melted
Instructions
- Combine everything in a food processor and pulse until smooth. Using damp hands, form into balls. Chill until set in the fridge, at least one hour. Store in an airtight container.
