Courgette, Mint & Feta Fritters with a Yoghurt Dipping Sauce

Ingredients
Fritters
3 medium zucchini, ends cut off
3-4 sprigs of basil or mint, leaves only
2 eggs, lightly beaten
60 gm chickpea flour (or normal flour)
½ t baking powder
1 t cumin powder
60 gm cold water
zest 1 lemon
2 T nutritional yeast flakes, optional
¼ t chilli powder, optional
a good grinding of salt and pepper
40 gm, feta, crumbled
olive oil, for shallow-fry
Dipping Sauce
125 gm natural unsweetened yoghurt
juice of ½ lemon
1 t cumin powder
½ t wholegrain mustard
a good grinding of salt and pepper
To Serve
chutney of your choice
sliced spring onions
Instructions
- Insert Thermomix® Cutter shaft and basket and then place cutting disc with side 2 (grating) facing up. Place cutter lid into position and insert zucchini in wide part of feeder. Insert pusher and start Grating /Thick. Continue with remaining zucchini. Transfer to tea-towel and squeeze as much liquid out as possible. Remove Thermomix® Cutter and shaft.
- Place the basil or mint into mixing bowl and chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add eggs, chickpea flour, baking powder, cumin powder, cold water, lemon zest, nutritional yeast flakes (if using), chilli flakes (if using), and salt and pepper and mix 5 sec/speed 3.
- Add the reserved zucchini and feta and mix 5 sec/reverse/speed 3, mixing with aid of spatula, until well combined. Repeat if necessary.
- Place a large frying pan over medium heat and add oil. Working in batches, place heaped tablespoons of the zucchini mixture into pan and fry 3-4 minutes each side, until golden and cooked through. Transfer onto a plate lined with paper towel and cover to keep warm (makes approx. 20-25 fritters in total).
- Serve immediately with dipping sauce on the side and a serve of chutney, either as an entree, as a lunch or as part of a main meal with a salad on the side.
- For the dipping sauce, mix all the ingredients in a small jug and combine evenly. Set aside until serving.
