Rainbow Beef Soba Noodle Salad
Prep time: 15 minutes | Cook time: 10 minutes | Serves: 5
Slaw
1600 g water
180 g dried soba noodles, broken in half
1 tsp olive oil
2 spring onions, trimmed and cut into pieces (approx. 30 g)
300g red cabbage
1 medium red pepper, cut into 3cm chunks
2 carrots, cut into pieces (4 cm) (approx. 200 g)
3 sprigs of coriander, torn
1 avocado, cut into small chunks
Dressing
1 clove garlic
4 cm piece of ginger
40 gm rice wine vinegar
2 t sesame oil
3 t coconut sugar
30 gm lime juice (approx. juice of 1-2 limes)
50 gm soy sauce (use GF if required)
a good grinding of salt and pepper
Beef Steak
4-5 pieces of beef steak, sirloin or rump
salt and pepper
To Serve
80 g roasted unsalted peanuts
3 sprigs fresh coriander, leaves only
1 tbsp black sesame seeds
Slaw
Place water into mixing bowl and bring to the boil 12 min/100°C/speed 1, or until water is boiling.
Insert simmering basket. Weigh soba noodles into simmering basket and cook 6-8 min/100°C/speed 1, until noodles are cooked. Remove simmering basket with aid of spatula and rinse noodles under cold water to stop cooking.
Allow noodles to drain, then transfer into a large bowl and drizzle with olive oil. Gently toss to ensure oil covers all of the noodles, then set noodles aside to cool completely. Rinse and dry mixing bowl.
Place spring onions into mixing bowl and chop 3 sec/speed 7.
Add cabbage & red/yellow pepper and chop 6 sec/speed 4. Scrape down sides of mixing bowl with spatula, then chop 2-3 sec/speed 5, until an evenly chopped consistency is achieved. Transfer into a serving bowl and set aside.
Place carrot and coriander into mixing bowl and chop 3-5 sec/speed 5, until an evenly chopped consistency is achieved. Transfer into serving bowl with cabbage and set aside. Wash and clean mixing bowl.
Dressing
Place garlic and ginger into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
Add all remaining dressing ingredients and blend 10 sec/speed 9. Transfer into serving bowl with the slaw and combine well with spatula. Clean and dry mixing bowl.
Beef Steak
Heat a heavy based fry pan (or heat up a barbecue) until medium-hot. Add the beef and cook for 3 minutes each side, or until just cooked through and still pink. Allow to sit and then slice finely.
To Serve
Place peanuts into mixing bowl and chop 1-3 sec/speed 6, or until a roughly chopped consistency is achieved.
Add cooled soba noodles to slaw in serving bowl and gently combine with spatula. Divide onto plates, lay slices of beef over the top, and garnish slaw with chopped peanuts, coriander leaves and black sesame seeds, then serve immediately.
