Ingredients
- 1½ c mixed nuts (eg. almonds, pecans, hazelnuts)
- ½ c pumpkin seeds
- ½ c sunflower seeds
- ½ c thread coconut
- ¼ c linseeds
Instructions
- Add the mixed nuts into a food processor and blitz until mixed but still reasonably chunky. Add them to a large bowl with the pumpkin & sunflower seeds and the thread coconut. Dry fry the nut mix in a frying pan for about 5 minutes until slightly browned. Allow to cool, and store in an airtight container or glass jar. You'll only need about a quarter or a third of a cup as it's very filling.
- Serve with a dollop of coconut yoghurt, some berries and milk or coconut water.
