Serves: 1¼ c
  • ¾ small jar of sun-dried tomatoes, drained
  • 235gm jar of pimento stuffed green olives, drained
  • 1 medium spring onion, roughly chopped
  • 7-8 fresh basil leaves, finely chopped, extra for garnish
  • 50gm feta, crumbled
  1. Place the sun-dried tomatoes, olives and spring onion in a food processor and process until combined, the mixture should be reasonably smooth, with a slight texture. Add the basil and process for another few seconds. Spoon onto a serving plate. Crumbled feta over the top and garnish with extra basil leaves.
  2. Serve with gluten free crackers or grainy crackers
