Serves: 40 crackers
  • ½ c sunflower seeds
  • ½ c linseeds
  • ⅓ c sesame seeds
  • 2 ½ T chia seeds
  • ½ t salt
  • 1 T psyllium husks
  • 1 T olive oil
  • 1 c water
  • 1 T nutritional yeast flakes, optional
  1. Preheat oven to 160 C. Line a 40cm x 33cm baking sheet with baking paper or a teflon baking sheet. Mix all the ingredients together and leave to stand for 10 minutes to thicken.
  2. Using a spatula or off-set spatula (cake decorating knife), spoon mixture onto the tray and spread out as thinly as possible (the mixture should cover the whole baking tray). Bake for 40-45 minutes until browned around the edges and brown on top. Allow to cool and then break into pieces.
  3. Store in an airtight container. Will last for 2 weeks. Serve with cheese, hummus, dips or as a lunch with cottage cheese and tomato.
