Ingredients
  • 4 medjool dates, pips removed (or 8 dried dates), soaked in boiling water for 5 minutes, drained
  • ½ c pumpkin seeds
  • 1 c desiccated coconut
  • 1 t vanilla essence
  • 1 T pure maple syrup
  • 2 T cacao powder
  • ¼ c chocolate protein powder, optional
  • ⅓ c coconut oil, melted
Instructions
  1. Combine all ingredients in a food processor and pulse until smooth. Form into balls using damp hands. Refrigerate, for approximately 1 hour, until firm.
  2. Store in an airtight container in the fridge. Suitable to freeze.
