Nut Free Protein Balls

Serves: 16 balls
Ingredients
- 4 medjool dates, pips removed (or 8 dried dates), soaked in boiling water for 5 minutes, drained
- ½ c pumpkin seeds
- 1 c desiccated coconut
- 1 t vanilla essence
- 1 T pure maple syrup
- 2 T cacao powder
- ¼ c chocolate protein powder, optional
- ⅓ c coconut oil, melted
Instructions
- Combine all ingredients in a food processor and pulse until smooth. Form into balls using damp hands. Refrigerate, for approximately 1 hour, until firm.
- Store in an airtight container in the fridge. Suitable to freeze.
