Serves: 2-3 serves
  • 3 ripe bananas
  • 6 eggs, lightly beaten
  • ½ c desiccated coconut (extra to serve)
  • 1 c blueberries, defrosted or fresh
  • ½ t cinnamon
  • 2 t coconut oil
To serve
  • 1-2 T coconut yoghurt
  1. Mash bananas with a fork. Add whisked eggs and coconut. Add blueberries (reserving a few for serving). Heat oil in a heavy based fry pan over a medium heat. Add a couple of tablespoons of mixture into the pan (you should be able to fit about 3-4 pikelets at a time).
  2. Cook for a couple of minutes one side until browned and set and then flip and cook for another minute on the other side. Stack the pikelets and top with the reserved blueberries. Serve with coconut yoghurt on the side.
