Turmeric, Ginger & Lemon Energy Balls

These turmeric, ginger and lemon energy balls are the perfect combination for a healthy go-to snack to have on hand. They're a great source of protein from the nuts and healthy fats from the coconut to make a naturally sweet treat, not to mention the health benefits from the fresh ginger and turmeric if you're able to source fresh. If you’re short of time, instead of rolling them into balls, press them into a slice tin and cut into squares or rectangles - tastes exactly the same, it's just easier and quicker! Gluten-free, dairy and a nut free alternative provided.
Ingredients
  • ½ c almonds (use equal parts sunflower and pumpkin seeds if nut free)
  • ¼ c sunflower seeds
  • ¼ c pumpkin seeds
  • ½ c desiccated coconut
  • 4 large medjool dates or 8 small ones
  • 2 T chia seeds
  • juice and rind of 1 lemon
  • 1 t finely grated fresh ginger or ½ t dried ginger powder
  • 1 t finely grated fresh turmeric or ½ t dried turmeric powder
  • 1 t vanilla essence
  • a good grinding of black pepper (this just helps the absorption of curcumin, the active ingredient in turmeric, you can’t taste it)
  • ¼ c coconut oil, melted
  • ½ c extra desiccated coconut for rolling
Instructions
  1. To make the turmeric balls, in a food processor or blender, process all the ingredients until the mixture is combined and starts to stick together. Roll about a tablespoon at a time into little balls and roll in coconut. Chill in the fridge for 30-60 minutes. Store in an airtight container in the fridge. Suitable to freeze.
