Layered Apple Cake/Loaf

This delicious Apple Cake or Loaf is so easy, perfect for the kids to make and divine served warm with whipped cream or natural yoghurt. Replace the apple with sliced feijoa or other fruit that is in season. The layered approach gives a different take on the standard cake with the fruit just mixed throughout.
Ingredients
  • ¼ c walnuts, roughly chopped
  • ¾ c raw sugar (used in two separate measures)
  • 1 t cinnamon
  • 2 t wheatgerm
  • 1 c thin, peeled apple slices (or feijoa slices)
  • ½ t lemon juice
  • 125gm butter
  • 2 eggs
  • ¾ c wholemeal flour (or omit flour below and use 1 ¼ c wholemeal flour)
  • ½ c flour
  • 1 ½ t baking powder
  • ½ t baking soda
  • ½ c natural unsweetened yoghurt (or coconut yoghurt if dairy free)
Instructions
  1. Preheat oven to 180 C. Grease and line with baking paper a large loaf tin or a 23cm ring tin.
  2. To make the Apple Cake, make the apple filling first. Put the nuts, ¼ c of the raw sugar, cinnamon and wheatgerm in a bowl. Add apple or feijoa slices and lemon. Stir and set aside.
  3. In a big bowl, cream the butter and rest of sugar until light and fluffy. Add the eggs and beat until smooth.
  4. Sift in the flour, baking powder and soda. Add yoghurt and stir until just mixed.
  5. Spread half of the batter into the prepared tin.
  6. Evenly spread the apple/feijoa layer over the top. Spread the rest of the batter over the top and smooth out the top.
  7. Bake for 30-35 mins (slightly longer for the cake) or until skewer comes out clean. Cool in the tin for 10 minutes before cooling on a wire rack.
  8. Delicious served warm as a dessert with whipped cream or yoghurt, or for afternoon tea.
