Preheat oven to 180C. Place the almonds and seeds out evenly onto a baking tray and roast for about 7 minutes, turning them over once during cooking for even roasting. They should just start to be turning lightly golden brown.
Remove from the oven and transfer into a glass jug or bowl. Add the tamari, it should sizzle for a bit and stir until evenly coated. Pour back onto the tray and evenly distribute again.
Place back in the oven and roast for a further 2 minutes. Remove and give them a stir then return to the oven for a further 2-3 minutes. You want them dry looking as they shouldn't look wet any more once cooked. Allow to cool.
Note – they will be soft at this stage but they do become crisper upon cooling. Store in an airtight container once completely cool. Will last a couple of weeks.
