Homemade Toasted Muesli

Ingredients
  • 7 c fine rolled oats
  • 1 c bran
  • 1 c thread coconut
  • ½ c pumpkin seeds
  • ½ c sunflower seeds
  • ½ c linseeds
  • ½ c oatbran
  • ½ c wheatgerm
  • ¼ c slivered almonds
  • 1 t cinnamon
  • ¼ c honey
  • ½ c oil
  • ½ c goji berries, optional
Instructions
  1. Preheat the oven to 150° C. Mix all the dry ingredients in a large baking dish.
  2. Melt the honey and oil together over low heat in a pot.
  3. Combine honey mixture with dry ingredients and mix well.
  4. Cook in the oven for 20-25 minutes and then remove and turn over. Return to the oven for a further 15-20 minutes until lightly browned. Remove and cool completely. Once cool, stir through the goji berries. Store in an airtight container.
  5. Serve with a dollop of natural unsweetened yoghurt, or coconut yoghurt, berries and milk, nut milk or coconut water.
