Fruit Spring Rolls

These fruit spring rolls are a fun twist on the traditional vietnamese spring rolls which are made with noodles and vegetables. You can experiment with fillings of your choice – almost anything will go with avocado, which provides healthy fats, yet a neutral flavour. The shredded coconut adds some texture and substance.
Ingredients
  • 1 packet of square rice paper sheets (generally found at an Asian store. Supermarkets stock round ones but they’re harder to roll)
  • sliced fresh fruit/vegetable fillings of your choice such as:
  • avocado, cucumber batons, mango and strawberry
  • banana and kiwifruit
  • shredded coconut
  • lemon juice
  • small fresh mint leaves and/or edible flowers
  • optional: natural yoghurt for a dip (use coconut yoghurt if dairy free)
Instructions
  1. Prepare all of your sliced fruit fillings.
  2. Squeeze the fresh lemon juice over the avocado and banana to keep it from browning.
  3. Lay a clean damp tea towel on the bench to prepare the rolls on.
  4. Fill a bowl (large enough to fit the rice paper sheets in) with hot water.
  5. Carefully submerge a rice paper sheet into the water holding it at the corners and once soft, lay it flat on your damp towel.
  6. Layer your fillings at the end closest to you starting with the layer you want to see most (as this is the most visual once rolled). Leave about a 2cm space on either side for folding in the edges. Fold each side of the sheet in then tightly roll to form each rice paper roll.
  7. The wet paper will stick and seal itself. Continue with the rest of the rolls.
  8. Serve with yoghurt as a dip if you wish.
  9. These fruit spring rolls are best served fresh, however, they can be refrigerated in an airtight container with baking paper separating them so they don’t stick and a damp tea towel or paper towel laid over the top.
  10. This is a really fun activity to do with your children, especially if they’re picky eaters because they can choose which fillings they would like to include – giving them control and choice.
  11. You can also vary the fillings to keep with what is in season, therefore making them a really economical snack or lunch option.
  12. Suitable for all allergy sufferers being gluten free (just make sure the rice paper sheets that you buy are gluten free as some of them use wheat flour), dairy free and nut free.
