Black Bean Nourish Bowl

Ingredients
Black Bean mixture
  • ½ T oil
  • 1 small red onion, finely diced
  • 2 cloves garlic, finely diced
  • 400gm black beans, drained and rinsed
  • 1 t cumin powder
  • 1 t coriander powder
  • ½ t salt
  • a good grinding of black pepper
  • 1 T lime juice (or lemon juice)
Ingredients to form the rest of the nourishing bowl:
  • 2 c finely sliced lettuce
  • ½ sliced red pepper
  • ½ cucumber, grated or spiralised
  • 1 large carrot, grated or spiralised
  • 1 avocado, sliced
  • 1 tomato or cherry tomatoes, cut into segments
  • fresh coriander leaves
  • 1 c roasted kumara
  • ¼ c toasted pumpkin and sunflower seeds
  • spoonful of smoked chilli barbecue sauce (in recipes section)
Instructions
  1. To make the black bean mixture, heat oil in a fry pan over a medium heat, add the onion and garlic and cook until soft, 3-5 minutes. Add the rest of the ingredients and cook until heated through. Set aside.
  2. While the black bean mixture is cooking, prepare the filling ingredients. Arrange in a bowl and serve with the black bean mixture in the middle and a dollop of barbecue sauce (or sauce of your choice) on the top.
