Ingredients to form the rest of the nourishing bowl:
2 c finely sliced lettuce
½ sliced red pepper
½ cucumber, grated or spiralised
1 large carrot, grated or spiralised
1 avocado, sliced
1 tomato or cherry tomatoes, cut into segments
fresh coriander leaves
1 c roasted kumara
¼ c toasted pumpkin and sunflower seeds
spoonful of smoked chilli barbecue sauce (in recipes section)
Instructions
To make the black bean mixture, heat oil in a fry pan over a medium heat, add the onion and garlic and cook until soft, 3-5 minutes. Add the rest of the ingredients and cook until heated through. Set aside.
While the black bean mixture is cooking, prepare the filling ingredients. Arrange in a bowl and serve with the black bean mixture in the middle and a dollop of barbecue sauce (or sauce of your choice) on the top.
