Apple & Pork Patties, Chips & Salad

Ingredients
Wedges
  • 2 potatoes, scrubbed and cut into wedges
  • 2 kumara, scrubbed and cut into wedges
  • 3 T flour, (rice flour if gluten free)
  • drizzle of multi-purpose oil
  • ½ t salt
  • a good grinding of black pepper
Pork Patties
  • 500gm premium pork mince
  • 1 granny smith apple, grated, skin included
  • 1 egg
  • ¼ c parsley, finely chopped
  • 2 spring onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 T tamari soy sauce
  • ½ t salt
  • a good grinding of black pepper
  • 2 T multi-purpose oil
Coleslaw
  • 1 c red cabbage, finely sliced
  • 1 c white cabbage, finely sliced
  • 1 medium carrot, grated
  • ½ c cheese, grated (omit if dairy free)
  • ¼ c sunflower seeds
  • ¼ c pumpkin seeds
  • mayonnaise of your choice
Instructions
  1. Preheat the oven to 200° C fanbake. Place the potatoes and the kumara in a large baking tray, sprinkle with the flour and shake until evenly coated. Add a drizzle of oil, season with salt and pepper and shake again to evenly distribute. Place in the oven for 25 minutes, until brown and crunchy, tossing half way through.
  2. Combine the pork pattie ingredients together in a bowl, except the oil. Heat the oil in a heavy based frying pan over a medium heat, form the mixture into patties and cook in the pan, about 4-5 minutes each side until brown and cooked through.
  3. While the patties are cooking, combine all the salad ingredients in a bowl and mix well.
  4. Serve the patties with the chips and salad on the side, topped with the mayonnaise.
