Put all the ingredients (except the passionfruit pulp) into a food processor and blend until well combined. Pour into a bowl and stir through the passionfruit pulp. Divide evenly into glasses and refrigerate for at least an hour or overnight. Garnish with extra passionfruit pulp and a mint leaf.
