Bliss Balls

Serves: 20 balls
Ingredients
- 2 c raw cashews
- ½ c pumpkin seeds
- 4 T cacao powder
- 4 medjool dates, or 6-8 normal dates,
- soaked in boiling water for 5 minutes drained
- 4 T pure maple syrup
- 1 t vanilla essence
- ¼ c desiccated coconut, for rolling
Instructions
- Place all the ingredients into a food processor. Process until smooth. Using wet hands, shape into small balls and roll in the coconut. Store in the fridge.
- Note: If you feel the mixture is too dry, add a little bit of boiling water to soften them up.

My daughter (12 years old) has just made your bliss balls and after being a bit skeptical about some of the ingredients (“so many nuts! dates look gross!”) declared “they taste like to Ferrero Rocher! ”

Yay to you!! Well done, you’ll now be a Bliss Ball addict…the lemon ones are divine! I’ve never heard them like a Ferrero Rocher before 🙂 Depending on how big they are but I’ll normally only put one in a lunchbox. As an adult, I only have one and they’re smaller than us… hope that makes sense.
