This delicious basil concoction is a great way to use up any excess basil you have in the garden which will last in the fridge for up to 5 days - or you could freeze it into ice cubes so you have it all year round. It’s a perfect addition stirred through pasta, in zoodles, as an accompaniment for steak, fish or chicken or as an extra spread in a sandwich to give it that extra zizz! The basil could be swapped out for other seasonal herbs too.

Serves: 1 cup
Ingredients
  • 2 c fresh basil leaves
  • 1 large clove garlic
  • 1 T lemon juice
  • ⅓ c olive oil
  • 1 T red wine vinegar
  • pinch salt
  • a good grinding of black pepper
  • 1 t Nutrient Rescue green shot powder
Instructions
  1. Combine all the ingredients in a food processor and blend until smooth. Add more oil until desired consistency. Store in an airtight container or glass jar in the fridge. The Nutrient Rescue powder can be omitted but this increases the vegetable content of the recipe to 4 serves of vegetables as one teaspoon of the green Nutrient Rescue powder is equivalent to 3 serves of vegetables.
