Ingredients
Black Bean mixture
- ½ T oil
- 1 small red onion, finely diced
- 2 cloves garlic, finely diced
- 400gm black beans, drained and rinsed
- 1 t cumin powder
- 1 t coriander powder
- ½ t salt
- a good grinding of black pepper
- 1 T lime juice (or lemon juice)
Ingredients to form the rest of the nourishing bowl:
- 2 c finely sliced lettuce
- ½ sliced red pepper
- ½ cucumber, grated or spiralised
- 1 large carrot, grated or spiralised
- 1 avocado, sliced
- 1 tomato or cherry tomatoes, cut into segments
- fresh coriander leaves
- 1 c roasted kumara
- ¼ c toasted pumpkin and sunflower seeds
- spoonful of smoked chilli barbecue sauce (in recipes section)
Instructions
- To make the black bean mixture, heat oil in a fry pan over a medium heat, add the onion and garlic and cook until soft, 3-5 minutes. Add the rest of the ingredients and cook until heated through. Set aside.
- While the black bean mixture is cooking, prepare the filling ingredients. Arrange in a bowl and serve with the black bean mixture in the middle and a dollop of barbecue sauce (or sauce of your choice) on the top.
