Serves: 2 cups
Ingredients
- ½ T oil
- 1 medium onion, finely chopped
- 2 cloves garlic, finely chopped
- 400gm can tomato puree
- 2 x 400gm cans of cannellini beans, drained and rinsed
- 1 t cumin powder
- 1 T pure maple syrup
- 1 T tomato paste
- ½ t smoked paprika (optional)
- salt and pepper
Instructions
- Heat the oil in a pot, add the garlic and onion and cook for 5 minutes, until soft. Add the tomato puree, the cannellini beans, cumin powder, maple syrup and tomato paste. Cook for a further five minutes until heated through. Lastly, add the paprika. Season with salt and pepper if desired. Serve on a salad or in a gluten free wrap.
